Coleslaw-no-mayo
Coleslaw without mayonnaise
This coleslaw is colorful and delicious.
1/2 Cup vegetable oil
3/4 Cup white vinegar
3/4 Cup sugar
2 teaspoons salt
1 Tablespoon celery seed
Combine above ingredients in a large microwave bowl and boil until sugar dissolves (be careful, it gets super hot and splatters)
Add the ingredients below and mix well. This coleslaw keeps for a few days refrigerated. The dressing recipe makes a little too much for the amount of salad, but it has to be drained before serving anyway.
1 Package Coleslaw mix (cabbage and carrots)
1 Red pepper, chopped
1 Green pepper, chopped
1 Onion, chopped
