Corn And Cheese Bread

Preheat oven to 400° f .

1 Cup canned cream-style corn
1 Cup yellow cornmeal
3 Eggs
1/2 teaspoon salt
1/2 teaspoon baking soda
1 Cup sour cream
1/3 Cup oil (not olive)
1 Cup grated sharp cheddar cheese
2 Tablespoons oil for pan
In mixing bowl, combine the corn, cornmeal, eggs, salt, baking soda and sour cream. Stir well and add the oil and cheese. Stir to blend.

Meanwhile, put the oil in a 9 inch skillet, preferably cast iron. Place in oven until it's very hot.

Pour batter into skillet. Bake 30 minutes or until bread is firm and golden brown on top.

Note, double recipe and use 9x13 glass pan, which you can heat in oven while preparing to make nice crispy crust
