Crock Pot Kheer/ Rice Pudding
RECIPE 1
When I made this, at first we thought it was a failure because it seemed to have never thickened, but after refrigerating it, it was creamy and thickened enough. Arastu thought it was a little too sweet, maybe reduce sugar next time. Also I didn't use cardamom pods, I used 1/2 teaspoon cardamom powder, and I didn't soak or rinse the rice

Ingredients:
1 gallon milk (any type)
1 c. basmati rice, washed & soaked
1 c. sugar
15-20 green cardamom (Break open and extract the black seeds and add the seeds only to the pudding.)
Put ingredients in the crock pot on high. Stir often until thick. (about 8 hours)
Top with chopped pistachios or almonds and serve hot or cold.
RECIPE 2 - this one doesn't take as long but isn't as creamy
CREAMY RICE PUDDING
1 gallon milk; skim, whole, or anything in between
1 c. raw rice, arborio or "risotto" rice works well
1 c. sugar
1/2 tsp. salt
Place all the ingredients in the crock pot. Cook on high until it simmers, stirring once in a while. When the rice no longer sinks as you stir, it is done, about 2 hours.
Add 2 teaspoons of vanilla and stir. Pour into a dish and cover the top with cinnamon. Chill.
